Went from Calphalon anodized classic & professional lines (Without Nonstick coating) which I still love but are showing age. New purchase was partly driven by prospect of going to an induction range and looking for a lighter weight but high quality product.   2. Best pan! I’ll never go back to “non stick” The best pan I have ever owned. Made the switch from “non stick” to stainless steel. I’ve prepared everything from delicate sunny side up eggs to sirloin steaks on this pan with zero issue. It does take a little know how to use stainless steel pans. First, you MUST preheat. Google “Mercury ball test” to see how this is done. On medium heat on an electric coil range I’ve been able to hit that heat point at under 3mins.   3. Disappointed! I own two other Calphalon Tri-ply pieces and they’re awesome, both over 10 years old and look like new. This pan is awful! It warped after first use and won’t sit flat on my glass cooktop, which makes it pretty much unusable because the heat isn’t distributed evenly. I’ve tried contacting Calphalon 3x and haven’t gotten a single response. Because of the size of the pan it’s going to cost over $40 to send it back (cheapest available), which seems absurd to make the customer pay for what is most…
